There should have been more color to the city shots.  My understanding is that those people painted everything.

Correct!  They did not live around white stone columns, they painted them.  Now I cant remeber if they painted them with bright colors or not, but I want to say yes.

I have not seen the movie, but I have been to Greece and many of the Islands there. They were heavy into mosaics and painting buildings and stuff.  Lots of colorful stuff.

I saw the castle set that was built on the coast of Cabo San Lucas, it was pretty neat to see the set sitting there on the beach while fishing for marlin.  Anyways good movie, and quite a uniform change for Eric Bana.
